BADAM DOODH
'Badam' means almond,'Doodh' means milk.A blissful,(not surprisingly!) popular drink,milk is combined with almonds,gently simmered till thick and creamy,then flavored with saffron and aromatic green cardamom powder.
Served hot,it is a soul satisfying experience on a cold winter night.Equally delicious when chilled,though.For a healthier version,use skim milk,and substitute the sugar with honey.

INGREDIENTS
3 cups milk
25 almonds - blanched and deskined
3 tablespoons sugar
6-7 unsalted pistachios - blanched,deskined and cut into slivers
1/4 teaspoon green cardamom powder
Generous pinch of saffron

METHOD
Cut 10 of the blanched,deskined almonds into slivers.Grind the rest in a blender with 1/4 cup of milk to a smooth,fine paste.
Take remaining milk in a non-stick pan and bring it to a boil on high heat.
Once the milk reaches a boil,add the almond paste,and reduce the heat to low.The almond paste will help make the milk creamy and beautifully silky.Stirring frequently,reduce the milk for six to seven minutes.Then,tip in the sugar and saffron,and continue cooking.After three minutes,add the fragrant cardamom powder along with slivers of almonds and pistachios.Simmer for another one minute,switch off the flame and pour into a glass,if serving Badam Doodh hot.Alternately,keep in the refrigerator until serving time and serve cold.
NOTE
NOTE
1. While traditionally a heavy bottomed vessel is used for Badam Doodh,using non-stick pan is even better since it prevents the milk from sticking at the bottom/getting burnt.
2. If the almond paste is coarse and not smooth,it should be blended for a few more seconds,then passed through strainer to ensure that the drink has a fine texture.

Yum! I love badam milk! For those avoiding dairy milk, almond milk works too...
Just realized that my comment may be confusing. There are many substitutes for dairy milk. For this recipe, since it involves almonds, I thought what's sold in the US as almond milk would work well.
This sure sounds like my kind of drink :) I love almonds and pistachios and just by looking at the photo I thought it was an ice-cold drink but then it's actually good for winter ~ YUM!
I had this dish the first time in Pushkar and I remember how unusual it tasted, it was something totaly new to me! It totaly represents Indias flavoures in my world.

I liked the taste but not keen on the bits in it. Others might like the extra texture. I thought i might grind it all next time or even turn it into a custard if that works :)

The Badam Doodh is both visually enticing as well as so flavorful. It tastes delicious. It had the addictive taste and sweetness luring me to the very last drop. The combination of the almonds and the pistachios were just a plus.
The cold Badam Doodh is very refreshing in the summer heat.
The warm Badam Doodh is a perfect warming drink for the fall and winter.
yumm ! Miss real badam milk ! Get some powdered ones here :( Now that I have this recipe, maybe will give it a shot !
